Caza can provide practical designs and cost efficient camps including kitchen, ablutions and bedrooms, to suit your individual requirements.

Tanya has over 25 years' of experience in business management operations. With a background in performance management and business development, Greg and Tanya bring a well-balanced & strategic management experience to the hospitality industry.

Creamy Lime and Avocado Tart

Ingredients:

Crust
• ¼ cup shredded unsweetened coconut
• ½ cup chopped pecans
• ½ cup dates (about 12 dates)
• 1-2 teaspoons lime zest
• pinch of sea salt

Tart Filling
• 2 avocados (about 1½ cups of avocado puree)
• ¼ cup of fresh squeezed lime juice
• ¼ cup coconut or agave nectar (or honey)
• 1 Tablespoon coconut oil
• 1 teaspoon lime zest (optional - ½ red chilli flesh finely diced)

Method:
1. Process the crust ingredients (coconut, pecans, dates, lime zest and sea salt) in a food processor or mini chopper until the dates have turned into sticky paste holding the crust ingredients together. Take mixture out of the processor and press evenly into two mini spring form pans. Place pans in freezer while you make the tart filling.

2. While the crust is setting in the freeze, blend ingredients for the filling (avocados, lime juice, agave, coconut oil and lime zest) in a high-speed blender or food processor until creamy.

3. Pour half the avocado filling over the crust in one pan and then pour the remaining filling over the crust in the second pan. Use a spoon to make sure the filling is even and smooth.

4. Place pans in the freezer to set up, at least 2 hours, but can be overnight. Take out of freezer, remove the spring form pan, let sit out for 10-15 minutes, cut into slices and serve. The longer it sits out; the filling will soften and become more like pudding. It still tastes amazing, but not as firm. Store any leftovers back in the freezer.

TWISTED JAFFA MUFFINS

Ingredients:

• Cupcakes
• 250 g good quality dark chocolate
• 250 g unsalted butter
• 3 medium eggs
• 250 g dark muscovado sugar
• 150 g self-raising flour
• 250 g cooked beetroot, grated
• 6 cardamom pods deseeded

• Icing
• 200g Cream Cheese
• 200g Icing Sugar
• 1 Orange Zest & Juice

Method
1. For the cupcakes: Preheat oven to 180C/160C fan/gas 4. Chop 150g of the chocolate very finely and break the remaining 100g into small chunks and put to one side.

2. Melt the butter and the very finely chopped chocolate together in a heatproof bowl sat over gently simmering water. Make sure the water beneath does not touch the bottom of the bowl.

3. Whisk the 3 eggs together with the sugar. Add the melted chocolate and butter and mix until smooth. Add the remaining chocolate chunks and mix thoroughly.

4. Sift the flour and salt over the mixture and fold it together. Carefully fold the grated beetroot & Cardomom into the mixture being careful not to over mix.

5. Spoon the mixture into paper cases sat in an appropriate cupcake tray and bake for 15 minutes. Don’t be tempted to over bake the cupcakes; part of their charm is to have a moist fudgy brownie like centre.

Iced Cinnamon Buns

Ingredients:

• 1 kg bread mix
• 3 tlbsp yeast
• pinch salt
• pinch cinnamon
• 4 tbsp sugar
• 100g sultanas
• 100mls vege oil
• 550mls hot water

Method:
1. Mix dough till combined , knead for 5 min , rest for 40 min in warm place , cut dough into desired size.

2. Tray up to prove for further 30 min.

3. Bake @ 180C for 17 min. Once cooked, brush with sugar & cinnamon glaze while buns are still hot.

4. Once buns are cooled coat with icing and coconut .

CHOCOLATE RAVIOLI

Ingredients:

• 500gm chocolate buttons
• 50gm hazelnuts
• 1 orange
• Half cup of orange juice
• 1 cinnamon stick
• 1 cup sugar
• 1 cup water
• Gow Gee wrappers
• Vanilla ice cream

Method:
1. Make sugar syrup half the sugar and half the water and cinnamon stick.

2. Slice orange thinly and poach gently in sugar syrup once orange is tender and syrup has reduced put aside to cool.

3. Roast hazelnuts in moderate oven.

4. In blender place all chocolate and hazelnuts and blend once starting to come together add couple of slices of orange and a little syrup to make nice chocolate mix (make sure not to wet or will explode when cooking final ravioli) should have a jaffa taste.

5. On a damp tea towel lay out Gow Gee wrappers and place spoonful of chocolate mix in the center of each one. When done using a pastry brush and water dampen two sides of the wrappers and then fold in half making a triangle. Pinch edges together making sure all the air has been expelled from inside wrapper. Once you have made desired amount place in air tight container with some rice flour (rice flour stops from sticking together) Then place in fridge until required.

6. Place the remaining sugar and spoonful of water in a heavy based saucepan and cook until the sugar has gone golden caramel. Take off heat and add the orange juice (be careful as will spit and burn) place back on heat until a nice caramel has formed. Take from heat and place in squeeze bottle.

7. Place 5 ravioli in deep fryer and fry until golden brown then in bowl and dust with generous amount of icing sugar.

8. On a plate place 2 slices of poached orange slightly overlapping then next to it your fried ravioli, then 2 nice balls of vanilla ice cream and finish off with your burnt orange Caramel sauce and sprig of mint.
